Hello, how can I access the "Graph" window layout here? Only the curves are visible to me. But how can I open the "graph" window where I will control the curves as in this image? I think it was when it was with the CTRL+Alt key. Or has this screen been canceled after the new updates?

You can control the curves directly in the Graph view. You'll need to change your keys to Bezier to see their handles.
Alternatively you can adjust curves using the Curves view. This is a different way of viewing the curves. It only shows you curves between 2 keys, while the Graph shows all curves at once. In the Curves view it is harder to see how curves for your whole animation look.
