Hello, first of all, skins shouldn't be used for new poses/directions, a preferrable workflow is this instead:

But to answer your question, you can hide the bones belonging to a skin in the tree settings:
Tree view - Spine User Guide: Hide skin bones and constraints
And you can add bones and constraints to a skin following the instructions here:
